Jamie’s Potato Soup (Almost)

My friend Jamie, makes this soup often for potlucks. It is very popular and the children ask for it often at home. It is wonderful with a green salad on the side.

Some good potatoes to try are Russet, Red potatoes or Yukon gold potatoes. Each will have a slightly different flavor.

Greek Dolmades with Avgolemono Sauce

When the kids were younger, we wanted to introduce them to recipes from around the globe. Allan had a friend from work who shared her recipe that she said was handed down for a few generations. Janet mentioned her family made these for Christmas Eve every year.

We have tried these once or twice and they were good. Last year we could not find jarred grape leaves at any store (this year we ordered early online). We also bought the ground lamb when we found it at the store and froze it so we knew we had it. Finding those ingredients was the hardest part of the recipe!

The recipe we were given uses lamb, but many online recipes use beef. So feel free to use either.

When we made these in 2012, Megan they they were wonderful! The rest of us enjoyed them also, but debated if they were too lemony or not.

Cornbread Stuffing

When I asked what type of stuffing to make for Thanksgiving, I was told “cornbread!”. Then we discussed the difference between “stuffing” and “dressing”. In case you do not know, you stuff “stuffing” and bake “dressing” in a casserole dish.

Turmeric Chicken Soup

As the weather cools down, hot soup is a very easy and filling meal. This recipe has been adapted from a recipe that Mom M. gave to Angie who passed it on to me.

The turmeric is very subtle and more could be added easily without overpowering the other flavors. If you like ginger and garlic, go sparingly at first. They are not super strong, but will quickly overpower the chicken.

Serve as is with some fresh bread.

Wonton Soup

Once upon a time, before internet and being able to find restaurants easily on a phone, a small family was traveling late at night through a strange city. A pregnant wife told her husband that she REALLY wanted wonton soup.

Sweet husband found hungry wife a Chinese restaurant and came back with a huge container of soup. Wife happily ate most of the soup, remembering to share a little.

Wonton soup has always been a favorite comfort food. I suspect it probably was because my dad would often take us for Chinese food for super special occasions.

Red Curry “Masaman” (Curry from Thailand)

We usually make a tomato based curry.  Our friend, Kristi Sellers, gave us this recipe in 2009 after introducing us to a different type of curry.  This is different, but just as good as the curries we are used to.

The recipe originated from a Ywam missionary friend from Thailand.
